In December of 1985, my family and I decided to visit Miami for Christmas. It was a very special experience, and we identified with the people of Miami and decided to remain and look around. After 14 years in California ( which I loved ), we thought it was time for a change. I personally enjoyed the city of Miami and the fact that Hispanics were playing an important role in current society, and additionally, that different cultures and norms were becoming accepted. It was my opportunity to share my own culinary experience, my Uruguayan culture, heritage, music...A few months later, in April of 1986, we moved to Florida.

In August of the same year Zuperpollo was born. The original name bore the S of superman, but to my surprise another business was using the name and so I decided to change the S for Z and dress the flying chicken like Zorro, which turned out less expensive than litigation. In its inception, we would open a franchise of chicken restaurants, but when I took to working in the kitchen and creating a menu, nostalgia for an Uruguayan restaurant as I had experienced with my own recipes and my own personal touch, and not being dependent on a chef allowed me to maintain consistency in the flavor of the foods.

That is a large part of our success today. Also, we had the fortune of getting rated “excellent” by the local and international press. And most important, we continue to nurture the best clients that have helped us to succeed for 20 years.
